Pancit Buko

Ingredients

3-4 cups

Grated buco

Chicken breast (cooked and flaked) (or pork or shrimps)

Onion (sliced)

Garlic (minced)

Carrot (cut into thin strips)

Stringbeans (sliced diagonally, 1inch long)

Cabbage (shredded)

Chicken broth

Patis

Kintsay  (chopped)

Cooking oil

Salt (adjust to taste)

Method
  1. Saute garlic in hot oil, add onion, then, stir in pork, shrimps and chicken

  2. Season with patis and cook for another 3 minutes, then, pour in chicken broth and simmer for 10 minutes and add vegetables

  3. When vegetables are almost done, set aside 1 cup for toppings

  4. Add grated buco in pan, stir and cook for 5 minutes

  5. Arrange pancit-buco on a plate and spread the remaining sauteed mixture on top

  6. Serve with patis and calamansi juice as sauce
