Ingredients

Tiger prawns (thawed)
Olive oil
Onions (chopped)
Garlic (peeled and chopped)
Red
peppers (sliced)
Arborio rice
Tomatoes (skinned and chopped)
Bay leaves
Vegetable stock
Frozen peas
Sea food selection (thawed) (drain and spread
on kitchen paper) |
Method
- Heat oil in a large pan and fry the seafood for 2 minutes
and remove with a
slotted spoon
- Add the onions to the pan and gently fry for 5 minutes
until softened
- Stir in the garlic and red peppers and fry for further 5
minutes until beginning to colour
- Add the rice and stir constantly for
1 minute
- Add tomatoes and bay leaves
- Stir in stock, bring to the boil,
lower the heat, cover and simmer gently for 20 minutes until stock is
mostly absorbed and rice is becoming tender
- Add the fish and seafood selection,
season and stir until well mixed
- Cook gently, uncovered for 15 minutes
until rice is tender, adding a little more stock if needed
- Serve with
lemon wedges
