Ingredients

Whole red snapper (or sea bass, blue fish or carp)
Salt
Vinegar
Water
Brown sugar
Vegetable oil
Garlic (minced)
Onion (chopped)
Ginger (cut into thin strips)
Button mushrooms (sliced)
Bell pepper (cut into thin strips)
Carrot (cut into thin strips)
Flour (sifted)
Method
  1. Clean fish and slit open
  2. Season fish with 1 tbsp salt (inside & out
  3. Mix vinegar, water, sugar and remaining salt and set aside
  4. Heat oil in a skillet and fry fish and set aside
  5. Sauté garlic until light brown
  6. Add onion and sauté until transparent
  7. Add ginger and pour vinegar mixture and bring to boil
  8. Add fish mushroom, pepper and carrots
  9. Stir in flour to thicken
  10. Cover and simmer for 5 minutes and serve hot
