Chicken Paella
 

Ingredients

1 kg

1/4 kg

2 cans

2 large

1/2 head

3-4 crabs

Chicken (cut into small pieces)

Chicken giblets and liver

Tomato sauce

Onions (chopped)

Garlic (minced)

Bay leaf (laurel)

Bell peppers (red and green strips)

Tahong (cooked in shell)

Crabs (cooked and quartered)

Sweet green peas

Chorizo de bilbao (sliced diagonally, 1/4 inch thick)

Pimenton powder

Vetsin

Egg (hard boiled) (for garnishing)

Rice (thoroughly washed)

Water

Salt (adjust to taste)

Method
  1. Saute and brown garlic in oil and stir in half of chopped onions

  2. When wilted, add chicken and stir unitl light brown and pour in 1 can tomato sauce

  3. Add bay leaf, vetsin, and salt and cover

  4. Cook until almost done then add pimenton, stir to blend well with sauce

  5. Then, add pepper strips, tahong, shrimps, peas, chorizo, and crabs and boil for 10 minutes and set aside

  6. Using a big wok (or kwali) saute' remaining onions until soft and add 1 can tomato sauce, water, and rice

  7. Stir to blend water with tomato sauce and when it boils, cover, lower heat to medium temperature and continue cooking until rice is cooked

  8. When done, toss rice with fork to make it fluffy

  9. Then, add 3/4 part of cooked mixture to rice

  10. Increase heat and mix to blend the cooked mixture and rice evenly and cook until dries

  11. Place in a big dish, spread the remaining cooked mixture on top

  12. Garnish with sliced hard boiled egg and chopped spring onion
