Chicken Galantina

 

Ingredients

Whole chicken (clean and debone)

Ham (chopped finely) (or 4 pieces sausage)

Ground pork (doubled grind)

Eggs (hard boiled)

Olives (chopped finely) (optional)

Salt

Vetsin

Ground white pepper

Carrots (cooked whole)

Grated cheese

Fresh bread crumbs

Method
  1. Rub whole chicken with salt and pepper (in and out) and set aside

  2. Mix together all ingredients except boiled eggs, whole pickles, and cooked carrots

  3. Stuff 1/2 of mixture in chicken

  4. Arrange the boiled eggs, carrots, and whole pickles (all cut into half, lengthwise) on top of mixture and then, spread remaining mixture (Do not overstuff chicken or the skin would burst while cooking)

  5. Sew the opening

  6. Place stuff chicken in baking pan

  7. Cover with cheese cloth or foil

  8. Use a pan just big enough to pack in chicken so stuffing will be firm when cooked and chicken can easily be sliced evenly

  9. Preheat oven (350 degrees F) for 10 minutes

  10. Bake for 1 hour or until done (To test, prick chicken with toothpick and when toothpick comes out dry, it is then cooked)

  11. Cool before slicing and serve with sauce

    (Make a delicious sauce out of the pan-drippings. Add 2 tbsp grated cheese, thicken with 1 tbsp dissolved cornstarch. Cook over low fire, stirring continuously until thick and smooth)
