Vegetable (or corn oil)
Potatoes (peeled and cut into quarters)
Garlic (minced)
Onion (finely chopped)
Pork loin (cut into 1 1/2 inch cubes)
Salt (adjust to taste)
Tomato sauce
Bay leaves
Freshly ground pepper
Oregano
Pimento-stuffed Spanish olives
Water
White vinegar
Bread crumbs
Red pepper (cored and sliced into 1/2 inch strips)
Sweet green pepper (cored and sliced into 1/2 inch strips)
Fresh (or frozen) sweet peas

Method
  1. In a large skillet, heat 2 tbsp of oil and fry potatoes and set aside

  2. In a large saucepan, heat 3 tbsp of oil and saute garlic and onion until golden brown

  3. Add pork and salt to taste and cook, stirring often, until pork is tender

  4. Stir in tomato sauce, bay leaves, ground pepper, oregano, olives, water and vinegar

  5. Simmer and keep stirring for 5 minutes

  6. Add bread crumbs, red and green pepper strips and peas

  7. Cook 10 minutes longer
