Adobong Labong
(Bamboo Shoots Adobo)
Ingredients

Vegetable
(or corn oil)
Garlic (minced)
Onion (minced)
Pork (boiled for 15 minutes
and cut into 1/2-inch cubes)
Shrimps (shelled, deveined and minced)
Patis (or salt)
Pork stock (reserved)
Bamboo shoots cut into
2x2 inch squares)
White vinegar
Salt (adjust to taste)
Freshly ground pepper (adjust to taste) |
Method
-
Save 1 cup stock from the pork that was boiled
-
Heat 2
tbsp oil in a skillet and saute garlic until light
brown and
onion until transparent
-
Stir in pork and shrimps and cook until shrimps
are
done (when they are pink)
-
Add patis
(or salt), stock and bamboo shoots and simmer for 15 minutes
-
Add vinegar
and continue simmering until the liquid has been reduced by
half
-
Add remaining 3 tbsp of oil and cook for another 10 minutes
-
Add salt and pepper to taste
