Onion (chopped)

Garlic (minced)

Ginger (grated)

Tomatoes chopped (or 1 tbsp tomato puree)

Green hot chilli

Green coriander (chopped)

Chilli powder

Coriander (grounded)

Garam masala

Turmeric

Curry powder

Olive oil (or any other oil)

Mint leaves (chopped)

Salt (adjust to taste)

1. Heat oil in a wide bottomed pan or a wok
2. When heated put all the ingredients together and stir for two minutes to mix thoroughly
3. Cover the pan or wok
4. Simmer on very low heat for  ten minutes

Serve with naan or pitta bread along with salad
