Nihari (Beef Stew)

 

Ingredients

Beef (with bones)

Onions (thinly sliced)

Flour

Dry ginger

White cardamoms

Bay leaves

Cinnamon stick

Garam masala

Aniseeds (fennel) seeds grounded)

Nutmeg

Turmeric powder

Black salt

Garlic paste

Ginger paste

Plain yogurt

Clarified butter (ghee) (or cooking oil)

Red Chilli Powder (adjust to taste)

Salt (adjust to taste) 

For Garnishing

Onion (sliced, fried to brown and dried)

Green Chillies (chopped)

Ginger (2 inch piece) (cut in strips)

Fresh coriander (cilantro) leaves  (chopped)

Method
  1. In a pot, heat the clarified butter or cooking oil
  2. Once the oil gets hot add in the 3 sliced onions and turn the stove down to medium and fry the onions to golden brown
  3. Remove from oil and put the onions on a paper towel to absorb any excess oil then crush the onions
  4. Add the meat and garam masala (whole spices), yogurt, ginger paste, garlic paste, salt, red chilli powder, bay leaves, cinnamon and turmeric powder, continuous fry by stirring until the oil separates
  5. Add in the nutmeg, cardamom, aniseeds and black salt
  6. Stir, add in enough water to cover meat and cook on low heat covered for 2 to 3 hrs
  7. Once the meat is cooked and tender, add in the flour and cook on low heat for about another 10 minutes
  8. Garnish with coriander (cilantro) leaves, fried onions, green chillies and ginger strips
  9. Serve hot with Naan or Chapati
