Mutton Do Pyazi (Curried Lamb with Onions)

 

Ingredients

500 gm

A bunch

Mutton (boneless) (cut into 1 1/2 inch pieces)

Onions (finely chopped)

Garlic (finely chopped)

Bay leaves

Green cardamoms (crushed)

Cinnamon stick (2 or 3 inch piece)

Cumin seeds

Dry ginger powder

Coriander powder

Red chilli powder (adjust to taste)

Garam masala

Ghee (or oil)

Fresh coriander (cilantro) leaves (chopped) (for garnish)

Salt (adjust to taste)

Method
  1. Heat ghee (or oil), in a 1 1/2 liter deep dish, in a microwave on full power for 1 minute
  2. Add the cumin seeds, bay leaves, cinnamon stick and green cardamoms and microwave on full power for 1 minute
  3. Add the finely chopped onions and garlic, and microwave on full power for 8-10 minutes or until golden brown
  4. Stir 2-3 times in between cooking
  5. Add lightly beaten curd, salt, red chilli powder, garam masala , coriander powder and dry ginger powder
  6. Mix well, add the mutton pieces and microwave, partially covered on 2/3 of full power for 4 1/2-5 1/2 minutes (depending on the size of the pieces)
  7. Stir twice in between cooking
  8. Garnish with chopped coriander (cilantro) leaves
  9. Allow to stand covered with an aluminum foil for 15-20 minutes before serving
