Chicken Makhani (Butter Chicken)

 

Ingredients

400 gm

1/4-1/2 cup

1

3 cloves

1 inch piece

1/4 tsp

1/2 tsp

1-2 tsp

1 tbsp

225 gm

2-3 tbsp

Chicken Thighs (or Breast) (skinless & boneless)

Almonds (grounded)

Onion

Garlic (crushed)

Ginger (crushed)

Cinnamon

Turmeric Powder (grounded)

Red Chilli Powder

Coriander Powder

Whole Peeled Tomatoes With Juice

Tomato Paste

Plain Yogurt

Butter

Method
  1. Trim and cut the chicken into small cubes, cover and put aside
  2. With a clean knife and board slice the onions into thin wedges
  3. Heat a large saucepan or frying pan and melt 2 to 3 tablespoons of butter until it is frothy
  4. Add the onions and the cinnamon to the pan and fry lightly
  5. When the onions are soft stir in the crushed garlic and ginger
  6. Then add the turmeric, chilli powder and coriander powder, and sauté over medium heat
  7. The spices are fried first to release their maximum flavour and this really enhances the dish
  8. Add the cubed chicken and sauté stirring constantly until the chicken has turned white
  9. Pour in the grounded almonds, tomatoes and tomato paste and mix thoroughly
  10. Cover and simmer for 20 to 30 minutes
  11. Add the yogurt and heat through
  12. Serve with plain rice, salad and chapati roti
