Udang Bercili (Chili Prawns)


 

Ingredients

12-15 large

1/4 cup

1/2 tsp

1 tsp

3 tbsp

5 cloves

1 inch piece

Fresh-water prawns
Tamarind & 1/4 cup water - squeeze for tamarind juice
Cornflour & 1/4 cup water - mix until smooth
Sugar
Cooking oil
Dried chillies (pounded)
Garlic (pounded)
Ginger (pounded)
Salt (adjust to taste)

Method
  1. Clean and trim prawns, leaving the tail shell on

  2. Slit along the back, remove the black vein and wash prawns in salt water

  3. Soak the prawns in the thick tamarind juice for 1-2 hours

  4. Heat oil and fry dried chillies, garlic and ginger until fragrant

  5. Add the prawns and season well with sugar and salt and stir well for 2-3 minutes

  6. Add the corn flour mixture and simmer until prawns are cooked and quite dry

  7. Dish up, garnish and serve hot
