Udang Bercili (Chili Prawns)
Ingredients |

Fresh-water prawns
Tamarind & 1/4 cup water - squeeze for tamarind juice
Cornflour & 1/4 cup water - mix until smooth
Sugar
Cooking oil
Dried chillies (pounded)
Garlic (pounded)
Ginger (pounded)
Salt (adjust to taste) |
Method
-
Clean and trim prawns, leaving the
tail shell
on
-
Slit along the back, remove the black vein and wash prawns in salt
water
-
Soak the prawns in the thick tamarind juice for 1-2 hours
-
Heat oil and fry
dried chillies, garlic and ginger until fragrant
-
Add the prawns
and season well with sugar and salt and stir well for 2-3 minutes
-
Add the corn flour mixture and simmer until prawns are cooked and
quite dry
-
Dish up, garnish and serve hot
