Pork Rib Soup


 

Ingredients

1 1/2-2 lb

Pork spareribs (cut into 1 1/2-2 inch pieces)

Water

Sugar

Star anise

Cinnamon stick (2 inches each)

Ginger (1 inch) (crushed)

Black peppercorns

Cloves

Onions (quartered)

Bay leaves

Carrots (cut 1 inch lengths)

Potatoes (peeled and quartered)

Cabbage (cut into 2 inch pieces)

Cilantro (leaves only)

Salt (adjust to taste)

Black pepper (adjust to taste)

Method
  1. In a stockpot, add water, spareribs, star anise, cinnamon sticks, cardamoms, ginger, black peppercorns, cloves, onions, bay leaves, sugar and salt to taste

  2. Bring to a boil, reduce heat to med, simmer uncovered 40-50 minutes, occasionally skim excess oil and any froth that forms on top

  3. Add carrot, potatoes, continue to simmer

  4. When potatoes, carrots are par cooked, add cabbage, simmer till cabbage is quite tender, but not too soft or mushy, turn off heat

  5. Garnish with cilantro, serve soup as a starter or as a main course with steamed rice and a chili dipping sauce
