Nonya Chicken

Vegetable oil
Chicken pieces
(cut quite small)
Fresh hot chillies
(cut into thick rounds)
Chinese dark soy sauce
Chinese light soy sauce
Sugar
Onion (peeled
and cut in 1/4 inch rounds)

Method
- Heat the oil in a non stick frying pan over a
highest heat
- When hot add the chicken and brown all over
and lift out with a slotted
spoon and set aside
- Pour out all but 3 tbsp oil and turn heat to medium
- Add the chillies and stir and fry for a few seconds
- Return the chicken and any accumulated juices to the pan
- Add 4 tbsp water and bring to a simmer
- Cover, turn heat to low and simmer
for 10 minutes
- Add the two soy sauces, the sugar and the onions
- Cover, turn heat
to low and simmer for about 5 minutes more or until the chicken is
cooked (There should be very little liquid left at the end of cooking)
- Serve with plain rice and a vegetable
