Nasi Lemak (Rice in Coconut Milk)

 

Ingredients

Rice

Grated coconut

Screwpine leaves (pandan leaves)

Salt (adjust to taste)

Shallots (sliced) (optional)

Ginger (optional)

Method
  1. Clean the rice and drain
  2. Squeeze out 2 cups of thick coconut milk from the grated coconut
  3. Cook the rice in the coconut milk with screwpine leaves
  4. Add in salt
  5. If you desire, you can also add in some sliced shallots and ginger
Serve with  hot sambal ikan bilis and/or sambal udang, garnished with cucumber slices, sliced hard-boiled egg, crispy fried ikan bilis and roasted peanuts

Sambal Ikan Bilis (Sambal Dried Anchovies)

 

Ingredients

1 cup

Dried ikan bilis (dried anchovies)

Tamarind pulp with ½ cup hot water to make juice

Chili paste

Shallots

Belacan

Garlic

Onion (sliced into rounds)

Little water to make paste

Method
  1. Blend chili paste, shallots, belacan, garlic, onion and a ittle water to make paste
  2. Heat 4 tbsp oil and fry ikan bilis until crisp
  3. Remove and drain on absorbent paper
  4. Use 2 tbsp of oil from above to a wok, fry blended ingredients, chili paste, shallots, belacan and garlic
  5. Add onions, tamarind juice, sugar and salt to taste
  6. Cook till gravy thickens to a dark reddish brown
  7. Add ikan bilis and mix well
  8. Remove from heat

Serve with  hot coconut rice, garnished with cucumber slices, sliced hard-boiled egg, crispy fried ikan bilis and roasted peanuts

Sambal Udang (Prawn Sambal)


 

Ingredients

500 gm

1/2 tsp

1 tbsp

1/2 cup

Prawns (clean and take out the shell)
Onions (sliced)
Turmeric powder
Tamarind paste (mix with 1/2 cup water and strain)

Coconut milk (optional)
Oil

Salt (adjust to taste)

Sugar (adjust to taste)

To grinded into a paste:

Dried chillies (soak in water)

Red chillies

Shrimp paste (belacan)

Candlenuts (buah keras)

Method
  1. Heat oil and saute the grounded ingredients till fragrant

  2. Add in prawns and stir-fry till prawns turn pink

  3. Pour the tamarind juice, salt, sugar and turmeric powder

  4. Add coconut milk

  5. Cook till gravy has thickened

Serve with  hot coconut rice, garnished with cucumber slices, sliced hard-boiled egg, crispy fried ikan bilis and roasted peanuts
