Nasi Goreng Kampung (Kampong Fried Rice)


 

Ingredients

1 bowl

1/2 cup

1/2 cup

2 tbsp

Cooked rice (long grain rice)
Boneless chicken (cut into small pieces)
Fried ikan bilis (anchovies)

Cooking oil
Salt (adjust to taste)

Sugar (adjust to taste) (optional)
Shredded cucumber (for garnishing)
Fried crisp shallots (for garnishing)
Chopped spring onions (for garnishing)

For the sambal-grind into a paste:

Dried chillies (soak in water)

Garlic

Dried shrimp paste (belacan) (5 cm x 2.5 cm x 0.6 cm)

Shallots (or 1 large onion)

Fresh turmeric

Enough oil to saute the sambal

Method
  1. Heat up enough oil in low flame, add in the sambal paste and saute until oil surface

  2. Dish out in a bowl

  3. In a wok add cooking oil, add chicken and stir fry until almost cooked, then add in cooked rice, stir-fry until the oil coats the rice nicely

  4. Add the sambal, salt, sprinkle some water and stir the rice nicely and close the fire

  5. Add in the anchovies and mix

  6. Dish into a plate and garnish with cucumber, crisp shallots and spring onions

Potatoes (cut small), carrots (cut small), green peas, corn, prawns (fresh or dried) and eggs can be added, if desired
