Kari Ikan (Curry Fish)


 

Ingredients

750 gm

Fish (cleaned and cut into serving pieces)
Cooking oil
Red chili (cut into long thin strips)
Spring onion (cut into 5 cm lengths)
Water
Garlic (pounded)
Onions (pounded)
Dried shrimp paste (belacan) (pounded)
Fresh ginger (pounded)
Red chilies (pounded)
Lemon grass (pounded)
Galangal (pounded)
Tamarind juice
Black pepper (adjust to taste)
Salt (adjust to taste)
Method
  1. Heat oil in pan and fry pounded ingredients for 10-15 minutes, stirring frequently

  2. Add water and bring to the boil

  3. Put in fish and add tamarind juice, black pepper and salt

  4. Lower heat slightly and simmer till fish is tender

  5. Dish out and garnish with chili and spring onion strips
