Chicken (cut into bite size pieces)

Chilli paste

Garlic (Grounded)

Mustard

Tamarind juice

Oil

Sugar (adjust to taste)

Salt (adjust to taste)

1. Half fry chicken in hot oil
2. Remove and set aside
3. Heat oil in pan and add chilli paste, garlic, mustard and stir fry till oil floats from paste
4. Add a little water at a time so that the paste does not burn
5. Put in chicken and stir a while
6. Add in tamarind juice, salt and sugar
7. Allow to simmer until chicken is cooked
8. Add a little water whenever the paste gets dry

Best served with hot rice
