Chicken Curry with Potatoes

Ingredients

Chicken (cut in bite size pieces)

Potatoes (pre-boiled and cut into quarters)

Garlic

Ginger (sliced)

Clilli paste or sambal oelek

Coconut milk or fresh milk

Onions (thinly sliced)

Lemon grass

Lemon leaf (optional)

Cloves

Lemon juice

Cinnamon stick (small)

Oil

Salt (adjust to taste)

Curry powder (make smooth paste by adding water)

Method

  1. Grind garlic, ginger and chillies into fine (spicy) paste

  2. Stir fry onion in hot oil until soft

  3. Add cloves, cinnamon stick, (spicy) paste, curry powder paste and cook for 1 minute

  4. Add chicken pieces and salt and soak in (spicy) paste

  5. Add potatoes, 1 cup coconut milk, lemon grass and lemon leaf

  6. Simmer until chicken is cooked

  7. Add further 1 cup coconut milk

  8. When boiling, add lemon juice and cook for further 1 minute

Best served with hot rice
