Butter Prawns


 

Ingredients

600 gm

2 tbsp

1/2 cup

2 sprigs

1 tbsp

Tiger prawns
Butter
Oil
Egg yolks (slightly beaten)
Curry leaves (cut into small pieces)
Bird's eye chillies
Sugar
Salt (adjust to taste)

Method
  1. Heat oil in a wok and fry the prawns and dish out
  2. Heat butter in a wok and pour the beaten egg yolk into the butter from a height and keep stirring constantly till it resembles soft flakes
  3. Add in bird's eye chillies, curry leaves, sugar and salt
  4. Add in prawns and stir well
  5. Dish out into a strainer and transfer into a plate and serve hot
