Ikan kembong/sting ray
Pineapple (slice into rings)
Dried chillies
Shallots
Garlic
Shrimp paste
Tamarind pulp (soak in 1 cup water and extract juice)
Lemon grass
Kaffir lime leaves
Ginger flower
Turmeric powder
Oil |
Method
- Grind finely shallots, garlic and shrimp
paste
- Heat oil and fry the ground ingredients and lemon grass till
aromatic
- Add in the tamarind juice, 2 cups water, ginger flower, sugar and salt to
taste
- Bring to boil and add in the kaffir lime leaves, fish, pineapple and
cook again for another 5 minutes
- Serve hot
