Corn oil

Chicken breast (diced)
Chicken thigh (diced)

Onion (chopped)
Celery (chopped)

Red bell pepper (diced)
Jalapeno (minced) (adjust to taste)
Cumin (ground)

Chicken broth
Plum tomatoes (chopped)

Fresh pumpkin (or rutabaga)
Pared sweet potato (diced)

Corn kernels (fresh or frozen)
Cilantro or parsley (minced)

White rice (cooked)

1. In a medium nonstick saucepan heat the oil over medium high heat
2.  Add chicken and cook turning frequently until lightly browned on all sides
3. Remove chicken and set aside
4. Add onion and cook until golden
5. Add celery, bell pepper, jalapeno and cumin and cook stirring for 3 minutes
6. Add broth, tomatoes, pumpkin and sweet potato and bring to a boil
7. Reduce heat cover and simmer until sweet potato is tender
8. Add chicken and corn and simmer 10 minutes longer

Sprinkle with cilantro and serve with rice
