Sugar
Salt
Fish sauce
Garlic
Peanut butter
Lime juice
Chili pepper (or dried crushed hot pepper) (optional)
Roasted peanuts

1. In a medium pot caramelize the sugar on medium heat until golden brown

2. (For safety, bring the hot pot of caramelized sugar to the sink, step away), then add 1 cup hot water (It will steam up, be very careful. Alternatively, wait for a couple of minutes for it to cool, then add the hot water)

3. Bring the pot back to the stove and boil until the sugar dissolves (cover with a lid for faster results) and let cool 30 minutes

4. Transfer to a blender and add salt, fish sauce, garlic, peanut butter, lime juice, and pepper and blend 30 seconds

5. For extra flavor, place roasted peanuts in a frying pan on high heat

6. Shake and stir constantly 3 minutes and let cool 15 minutes

7. Chop in a mini chopper 5 seconds and set aside

8. Serve in individual sauce bowls and garnish with the chopped roasted peanuts
