Lao style BBQ Ribs

 

Ingredients

For the ribs:

 

5 lbs

5 tbsp

2 stalks

3 cloves

3 tbsp

Pork ribs

Fish sauce

Lemongrass (bottom half only, finely chopped)

Garlic (chopped)

Sugar

For chili sauce:

2

1 clove

2 tbsp

1/4 cup

5 tbsp

2

Green Thai bird chilies (or jalapenos)

Garlic

Sugar

Cilantro leaves

Fish sauce (adjust to taste)

Lime juice (adjust to taste)

For the rice:
2 cups Thai glutinous rice (soaked in water to cover overnight)
Method
  1. Place ribs in bowl with the fish sauce, lemongrass, garlic and sugar

  2. Mix well, cover with plastic wrap and marinate for a minimum of 2-3 hours or overnight

  3. In a mortar and pestle or small food processor, grind the chilies, garlic and sugar into a smooth paste

  4. Add cilantro, lime juice and fish sauce

  5. Add additional lime juice, fish sauce and sugar to taste for the sauce

  6. Drain the rice and steam in a covered bamboo steamer over several inches boiling water for 40 to 45 minutes, or until it is cooked through

  7. Meanwhile, heat a grill or hardwood charcoal fire

  8. Cook the ribs 4 to 5 minutes per side

  9. Serve immediately
