Furr (Laotian Breakfast Soup)

 

Ingredients

2 tbsp

3/4 cup

2 cloves

1 cup

1/2 cup

1 cup

1/2 cup

1 qt

1 handful

1/4 lb

Vegetable oil
Raw pork (minced)
Garlic (minced)
Onion (chopped)
Pumpkin (cut into 1/2 inch cubes)
Long (or green) beans (cut into 3/4 inch pieces)
Mushrooms (sliced)
Beef or chicken stock
Laotian leaf (marijuana)
(or rau ram, a Vietnamese herb)

ice vermicelli

Red serrano or jalapeño chiles (stems and seeds removed and minced)

Method
  1. Heat the oil in a heavy saucepan and saute the pork

  2. Push the pork to one side and saute the garlic and the onion

  3. Then add the pumpkin, beans, chiles, and the mushrooms and saute the vegetables for 30 seconds

  4. Pour in the stock and bring the mixture to a boil, then reduce the heat to a simmer and add the Laotian leaf and the vermicelli

  5. Simmer the soup for 30 minutes, or until the vermicelli is cooked
