Sokkori Kuk (Oxtail Soup)
Ingredients |

6 1/2 cups
1 medium
5
1
4 cloves
1 1/2 tsp

Oxtail (in pieces)
Water
Onion (cut into 2)
Scallions
Carrot (slice lengthwise into 1 1/2 inch strips)
Garlic (chopped)
Salt (adjust to taste) |
Method
- Brown the oxtail in a heavy pot, add the water and bring to a boil
slowly and skim off the froth
- Halve 2 of the scallions and add
the onions and cut scallions to the oxtail then cover and simmer for 3 hours
- Slice the carrot lengthwise into 1 1/2-inch strips
- Chop the 3 remaining scallions
- Add the carrot, garlic and scallions to
the soup
- Season with salt
