Seared Tuna
Ingredients |

3 cloves
3 tbsp
1 tsp
1/8 tsp
1/2 cup

1/2 tsp
1/2 tsp
2 tbsp

Garlic (finely chopped
Soy sauce
Sugar
Dried red pepper flakes
Canned chicken broth or homemade stock
Tuna steaks (about 1 " thick)
Salt
Pepper (freshly ground)
Cooking oil
Sesame oil
Green onion with green top (chopped)

Method
- In a bowl, mix the soy sauce, sugar, red pepper flakes,
and broth
- In a sauce pan, heat sesame oil
- Stir in the green onion and garlic and cook, stirring, for about 1
minute
- Add the soy sauce mixture and simmer until reduced to approximately 1/3
cup
- Sprinkle the fish with the salt and black pepper
- Heat the cooking oil in a large frying pan over moderately high heat
- Add the tuna and cook until brown for about 3 minutes
- Turn and cook the fish until done to your taste (best when the tuna
is
still very pink in the center)
- Cut the tuna into slices and serve with the sauce
