Seared Tuna

 

Ingredients

3 cloves

3 tbsp

1 tsp

1/8 tsp

1/2 cup

Garlic (finely chopped

Soy sauce

Sugar

Dried red pepper flakes

Canned chicken broth or homemade stock

Tuna steaks (about 1 " thick)

Salt

Pepper (freshly ground)

Cooking oil

Sesame oil

Green onion with green top (chopped)

Method
  1. In a bowl, mix the soy sauce, sugar, red pepper flakes, and broth
  2. In a sauce pan, heat sesame oil
  3. Stir in the green onion and garlic and cook, stirring, for about 1 minute
  4. Add the soy sauce mixture and simmer until reduced to approximately 1/3 cup
  5. Sprinkle the fish with the salt and black pepper
  6. Heat the cooking oil in a large frying pan over moderately high heat
  7. Add the tuna and cook until brown for about 3 minutes
  8. Turn and cook the fish until done to your taste (best when the tuna is still very pink in the center)
  9. Cut the tuna into slices and serve with the sauce
