Kalbi Kui (Marinated Short Ribs)
Ingredients |

4 extra large
2 large
3 cloves large
1/2 cup
1/4 cup
1 tsp
1/4 tsp
2 tbsp
1/4 tsp
1/4 tsp

Short ribs
(trim the excess fat)
Scallions (including green stems) (minced)
Garlic (minced)
Soy sauce
Sesame oil
Sesame seeds
White vinegar
Sugar
Dry hot mustard
Black pepper |
Method
- Score the meat deeply every
1/2 inch, almost to the bone
- Combine
all the ingredients to make the marinade
- Pour the
marinade over the ribs, allowing it to penetrate to the bone
- Turn the
ribs over, so the scored side is face-down in the sauce
- Cover, allow to
stand for 2 hours or refrigerate overnight, if possible
- Broil over charcoal or under an oven grill (If barbecued over
charcoal, the ribs may be removed and the cooked outside pieces eaten,
with the ribs then returned to the fire for additional cooking. If
broiled in the oven, the ribs must be cooked longer. The outside becomes
crisp and cooks more rapidly than the meat which is closer to the bone.
Cooking time is about 15 minutes)
