Jogae Pa Jon (Clam and Scallion Pancakes)

 

Ingredients

1 cup

1/4 cup

1/2 cup

2 bunches

Flour
Rice flour
Egg whites
Water
Fresh cherrystone clams (chopped)
Scallions (white parts only) (cut into batons)
Serrano (or green Thai-bird chilies) (sliced)
Salt
Oil

For the Sauce:

1/4 cup

1 clove

2 tsp

1 tsp

1 tsp

1 tsp

1/4 tsp

Soy sauce
Garlic (chopped)
Chopped scallion
Toasted sesame seeds
Sesame oil
Vinegar
Black pepper

Method
  1. In a bowl, whisk together the flour, water, and egg whites until the batter is smooth

  2. Stir in the clams, scallions, and salt

  3. To a heated pan, add the oil

  4. Scoop 2 tbsp of the batter into the pan to form pancakes about 3-inches in diameter

  5. Let cook for about 3 minutes per side until golden

  6. To make the sauce: combine all sauce ingredients

  7. Serve the pancakes immediately with the sauce
