Transparent noodles

Lean beef (cut in narrow strips)

Carrots (cut in matchstick strips)

Onion (cut in matchstick strips)

Green onions (cut in 2" strips)

Spinach (frozen or fresh)

Eggs (fried  as omelet on both sides and cut into strips)

Sugar

Soy sauce (adjust to taste)

Sesame oil

Sesame seeds (roasted)

Green onion (chopped fine)

Garlic (minced)

Black pepper

Vegetables can be added (mushrooms, zucchini, etc.)

Method
  1. Mix together sugar, soy sauce, sesame oil roasted sesame seeds, chopped fine green onion, garlic and black pepper as marinade
  2. Mix beef strips with about 2/3 of the marinade and set aside
  3. Boil noodles (as per instructions in the package), drain and rinse with cold water and cut to about spaghetti length
  4. Mix with remaining marinade
  5. Cook spinach in small amount boiling water till just barely cooked
  6. Stir fry vegetables in small amount of oil. (Add a little water to carrots to steam.)
  7. Fry the meat and marinade mixture last
  8. Add a little water when done
  9. Mix meat, vegetables, noodles, and half the egg strips together
  10. Serve on large platter or in large bowl, garnished with remaining egg strips, warm or at room temperature.
