Ddok Kalbee (Pork Ribs with Soft Rice Cake)

 

Ingredients

600 gm

Pork rib (Kalbee)

Kalbee seasonings:

1 tbsp

3 tbsp

3 tbsp

1/2 tbsp

1/2 tbsp

1 tbsp

2 tbsp

1 tbsp

A dash

A dash

Minced garlic
Chopped onion
Pear
Sugar
Honey
Sesame seed oil
Glutinous (sticky) rice powder
Soy sauce
Sesame seed

Pepper

Sauce:

1 tbsp

1 tbsp

1 tbsp

1 tbsp

A dash

Beef broth
Honey
Liquid sugar
Sugar
Pepper
Seasoned paste:

2 cups

3 tbsp

2 tbsp

3 tbsp

3 tbsp

1 piece

2 pieces

Soy sauce
Sugar
Honey
Liquid sugar
White wine
Dried chili pepper
Pepper corn
Sesame leaves

Method
  1. First prepare the seasoned paste. Place all the "Seasoned paste" ingredients in a cooking pot on medium heat and cook for 5 minutes

  2. After 5 minutes, sieve out the solid ingredients and leave the liquid on the side to be used later

  3. Finely grind the Kalbee meat

  4. Mix meat well with "Kalbee seasonings" ingredients

  5. Once mixed, knead the seasoned meat several times

  6. Oil a frying pan, put on low heat and cook one side of the Kalbee meat

  7. Once cooked (when edge of meat starts to turn white) flip over to the other side, put lid on the frying pan to thoroughly cook the Kalbee meat

  8. In a separate frying pan, place the "Sauce" ingredients along with 1 tbsp of the seasoned paste prepared in step one

  9. Once mixture starts to simmer place the precooked meat into the frying pan

  10. Cook the meat while continuously flipping it to ensure that the meat is thoroughly covered with the seasoned sauce
