Dak Tang (Basic
Soup Stock)
Ingredients |

4 cups
3 slices
1/2

Bones of whole chicken breast
Water
Gingerroot (each the size of a quarter)
Small onion (sliced) |
Method
-
Place the chicken bones in 4 cups of
water over medium heat and bring to a boil
-
Turn off heat and skim off any
floating fat or foam
-
Add the gingerroot and onion and
let simmer at the
lowest heat possible for about 1 hour (during simmering, break the
bones to release flavor) and cool the stock
-
Drain the stock through a sieve
or cheesecloth-lined sieve to obtain a clear broth
-
Refrigerate the stock overnight
-
Fat will congeal and float on top
-
Skim off most of the fat and discard
