Chonggak Kimch
Ingredients |

30 gm
15 gm
3 tsp
5 tsp
2/3 cup

Pony-tail radish (medium)
Young green onion
Garlic
Ginger
Salted anchovies (or salted
shrimps)
Powdered red pepper
Rough salt
Sugar (to taste)
Salt (to taste)
Powdered sesame |
Method
- Peel down radishes, nip off
except young leaves, and wash them
- In case radishes are too big,
cut them into four
- Spread some salt and leave
them still for 2hours
- Rinse and dry them
- Boil salted anchovies with
some water and leave the juice cool
- Dry trimmed green onions and
cut them as long as 3cm
- Chop washed garlic and ginger
into very little pieces
- Mix salted radishes with some
powdered red pepper until peppery red color is set
- Mingle with prepared salted
anchovies, young green onion, garlic, and ginger
- Season them with salt and
sugar
- Keep them in a container for
3~4 days
boil over medium heat |
