Chap Chae

 

Ingredients

Lean beef (cut into fine strips)

Pork (cut into fine strips) (optional)

Sesame seed oil

Soy sauce

Sugar

Black pepper

Garlic (peeled & chopped or 3/4 tsp garlic powder)

Carrots (peeled & julienned)

White onions (peeled, thinly sliced diagonally & divided)

Spinach leaves (roughly chopped)

Dried shiitake mushrooms (soaked in water to rehydrate)

Whole mushrooms (cleaned & sliced )

Noodles

1/3 lb

Cellophane noodles (or vermicelli)

Soy sauce

Sesame oil

Green onions (cut into 1 inch pieces, divided)

Egg (beaten, fried in a sheet and cut into strips) (optional)

Sesame seeds

Pepper (adjust to taste)

Salt (adjust to taste)

Method
  1. In a large nonstick skillet heat the sesame oil over medium heat

  2. Add the beef and pork strips along with the soy sauce, sugar, pepper, garlic, carrots and white onion and stir-fry until just cooked
  3. Add the spinach and continue stir-frying until the spinach is just wilted
  4. Transfer the mixture to a plate and keep it warm
  5. Meanwhile, remove and discard the stems from the rehydrated shiitake mushrooms and slice the caps into strips
  6. Cut the whole mushrooms into strips, as well, and add them to the skillet along with the rehydrated mushrooms
  7. Stir-fry until the mushrooms are softened and release their liquid
  8. Remove the mushrooms from the skillet and transfer them to a plate
  9. To prepare the noodles: Cook the cellophane noodles in plenty of boiling water until they are soft (This will take only about 2 to 4 minutes)
  10. Rinse the noodles in cold water, then cut them crosswise 2 to 3 times with scissors.
  11. In the same skillet, heat the soy sauce and sesame oil
  12. Add the noodles and stir-fry until they are heated through
  13. Add all the stir-fried vegetables and meat to the skillet, along with half of the green onions and the egg strips if desired
  14. Season with salt and pepper to taste
  15. Transfer the ingredients to a serving platter and sprinkle the dish with the remaining green onion and the sesame seeds
