Banja Gui (Barbecued Beef in Lettuce Wrapper)

 

Ingredients

Soy sauce
Minced garlic
Sesame oil
Mirin
Red pepper flakes
Sirloin (or flank steak) (sliced thinly on the bias)
Green onions (scallions) (julienned)
Hot red chili powder (adjust to taste)
Sesame seeds (toasted)
Garlic (very thin slices)
Green (or red lettuce) leaves

Method
  1. In a large, non-reactive bowl, combine 1/2 cup soy sauce, the minced garlic, 1 tbsp of the sesame oil, 1 tsp of the mirin, and the red pepper flakes
  2. Add the meat and toss to coat
  3. Cover and refrigerate overnight, turning occasionally
  4. Preheat the grill
  5. Mix the remaining 1/4 cup soy sauce with remaining 1 tsp of sesame oil
  6. Add the green onions (scallions), and garlic, and toss to combine and set aside
  7. In a small bowl, combine the remaining tsp of mirin, the chili powder and sesame seeds
  8. Remove the steak from the marinade and pat dry and grill for 1 minute on each side for medium-rare
  9. Lay the lettuce leaves on a flat work surface and rub the mirin mixture on the insides of the leaves and set aside
  10. Lay several slices of cooked steak in center of each leaf, drizzle with about 1 tbsp of the seasoned green onions (scallions), and top with 2-3 garlic slivers
  11. Fold the lettuce over the steak and wrap tightly
  12. Repeat with the remaining ingredients and serve immediately
