Yaki-Udon (Stir-fried Noodles)

Ingredients

400gm

2 tbsp

175gm

Dried udon noodles

Sunflower oil

Squid (cleaned and sliced)

Large cooked prawns (shelled and deveined)

Spring onions (roughly chopped)

Bean sprouts

Fresh shiitake mushrooms (sliced)

Dried green seaweed (soaked in hot water and drained)

Bonito flakes

Japanese or light soy sauce

Salt (adjust to taste)

Freshly ground black pepper (adjust to taste)

Method
  1. Boil and add the noodles
  2. Cook for 7 to 15 minutes
  3. Rinse under cold water and drain
  4. Heat the oil in a wok or frying pan until very hot
  5. Stir-fry the squid and prawns for 2 minutes
  6. Add the spring onions, bean sprouts, mushrooms and seaweed and stir-fry for further 2 minutes
  7. Add the noodles and remaining ingredients and seasonings, and stir-fry for further 1 minute
