Shimeji Itame (Spicy Glazed Mushrooms)

Tree oyster mushrooms (ends trimmed and separated)

Fresh shiitake mushrooms (steamed and sliced)

Vegetable oil

Sliced gingerroot (crushed)

Garlic (crushed)

Red chile (halved and seeded)

Light soy sauce

Mirin

Butter

Japanese  (nira) (or regular) chives

Salt

1. Briefly rinse mushrooms under cool water and gently press out water then pat dry on paper towels

2. In a wok or large skillet, heat oil over medium-high heat

3. Add gingerroot, garlic and chile

4. Stir-fry 1 minute until aromatic and discard

5. Add mushrooms and stir-fry 1 minute

6. Add soy sauce and mirin

7. Cook for 1 minute or until liquid evaporates

8. Stir in butter, salt and chives

9. Serve on a warmed serving plate
