Marinated Fried Chicken

 

Ingredients

500 gm

2 tbsp

Chicken thigh fillets (cut into 3 pieces)

Plain flour

A pinch salt

A pinch pepper

Red pepper (finely chopped) (a little) (for garnishing)

Yellow pepper (finely chopped) (a little) (for garnishing)

For the marinade

1 tbsp

6 tbsp

3 tbsp

1/4 tsp

Vegetable oil

Rice vinegar (or white wine vinegar)

Sugar

Salt

Ripe tomatoes

Cucumber

Method
  1. Skin the tomatoes by making a shallow cut on the top of them and soaking in a bowl of boiling water for 1 minute then deseed and dice into small chunks

  2. Chop the cucumber in the same way as the tomatoes

  3. Mix all the sauce ingredients together with the chopped cucumber and tomatoes

  4. Sprinkle chicken fillet pieces all over with plain flour to season

  5. Deep or shallow fry the chicken

  6. As soon as they are cooked (it will take about 5 minutes to cook both sides) take them out and place on a plate with a kitchen towel to get rid of any extra fat

  7. Pour over the marinade and marinate for about 15 minutes

  8. Place the chicken with some sauce on a serving plate and then garnish with the pepper and serve at room temperature with new potatoes or Potato Salad with Sesame Dressing
