Rice is the cornerstone of a Japanese meal and the Japanese word for boiled rice, gohan, is the same as the word for 'meal'. The variety used is either short or medium grain, and it is always steamed to perfection by absorption. Convenient for this are the electric rice cookers which always do a reliable job. While the earth yields rice and other food crops, the turbulent cross currents of warm and cold waters are rich in marine minerals which cannot settle to the sea floor, providing an excellent feeding ground and resulting in some of the best tasting and most nutritious sea produce in the world.

Besides the many seaweeds rich in iron and iodine, the ocean literally teems with life and the harvest of the deep, added to the bounty of rivers, yield some one thousand varieties of fish and shellfish, the basis of a healthy and nutrient-rich diet. From land and sea come the key flavour ingredients of Japanese cooking: the basic stock, dashi, made from bonito and seaweed, and sake, the sacred drink brewed from rice.

The passing seasons are celebrated in every aspect and this is reflected in a Japanese meal, from ingredients to the choice of serving dish and garnish. A creative presentation will evoke a season or a scene as deftly as a three-line haiku or a few well-chosen brush strokes. Maple leaves, pine needles, and bamboo leaves are just some of the garnishes used to achieve the desired effect. Simple rules of presentation such as round-shaped foods served in dishes with straight sides and square foods in rounded dishes reflect an unerring sense of balance.
