Spiced Chicken with Rujak

 

Ingredients

For Chicken

1/3 cup

4 cloves

1/3 cup

2 tbsp

2 1/2 tbsp

1 1/2 tbsp

2 1/2 -3 lbs

Onions (finely chopped)

Garlic (minced)

Soy sauce

Vegetable oil

Lemon juice

Red pepper flakes (optional)

Ground ginger

Black pepper (adjust to taste)

Broiler-fryer chicken (cut up)

For Rujak

Grapefruit

Lemon juice

Soy sauce

Brown sugar

Chili powder

Pineapple tidbit

Mangoe (under-ripe) (peeled and cubed) (3/4 cup)

Tart green apple (cored and cubed)

Cucumbers (sliced and seeded)

Method
  1. Prepare Rujak: Peel and section the grapefruit, reserving the juice
  2. Combine reserved juice with lemon juice, soy sauce, brown sugar, and chili powder
  3. Add pineapple, mango, apple, and cucumber, spooning juices over the other fruits to coat
  4. Cover and chill for several hours
  5. Prepare chicken: Combine onion, garlic, soy, oil, lemon juice, red pepper flakes, ginger, and black pepper as marinade
  6. Place chicken pieces in plastic bag inside a deep bowl, and add marinade to bag
  7. Seal bag and marinate chicken for several hours or overnight, turning bag occasionally
  8. Before cooking, drain marinade and pat chicken pieces dry
  9. Place marinade in a saucepan and bring to a boil for 5 minutes, cool slightly before using as a baste on chicken
  10. Place chicken pieces, bone side down, on a grill with medium-hot coals, grill 30-35 minutes, turning often and basting with marinade the last 10 minutes
  11. Serve chicken with Rujak
