Sayur Lodeh (Curried Vegetables)

 

Ingredients

Vegetable oil
Onion (finely sliced)
Garlic (sliced finely)
Coriander
Laos
Red chilli (crushed)
Cabbage (chopped coarsely)
Cauliflower (parted into florets)
Carrot (diced)
String beans (removing strings and cut 3 parts each)
Eggplant (cubed)
Salt
Coconut milk
Salam leaf
Shelled fresh (or frozen) shrimps (or chicken pieces) (cut into thin slices)

Method
  1. Heat oil in pan and saute onion lightly
  2. Add garlic, coriander and laos and fry for 1 minute
  3. Add shrimp and saute for 2 minutes
  4. Add chilli, cabbage, cauliflower, carrot, string beans, eggplant and salt
  5. Cover and cook over low heat for about 10 minutes
  6. Then add coconut milk and salam leaf and cook uncovered, stirring almost continuously, until vegetables are tender
  7. Serve with rice

 over medium heat
