Vegetable oil
Onion (finely sliced)
Garlic (sliced
finely)
Coriander
Laos
Red chilli (crushed)
Cabbage (chopped coarsely)
Cauliflower (parted into florets)
Carrot (diced)
String beans (removing strings and cut 3 parts each)
Eggplant (cubed)
Salt
Coconut milk
Salam leaf
Shelled fresh (or frozen) shrimps (or
chicken pieces) (cut
into thin slices) |
Method
- Heat oil in pan and saute onion lightly
- Add garlic, coriander and laos and fry for 1 minute
- Add shrimp and saute for 2 minutes
- Add chilli, cabbage, cauliflower, carrot, string beans, eggplant
and salt
- Cover and cook over low heat for about 10 minutes
- Then add coconut milk and salam leaf and cook uncovered, stirring
almost continuously, until vegetables are tender
- Serve with rice
over medium heat
