Sambal Goreng Ati (Spicy Sweet Chicken Liver Saute)

 

Ingredients

1 lb

1 cup

3 tbsp

1/4 cup

1 clove

1 tbsp

1/4 cup

1 tsp

Chicken liver

Water

Vegetable oil

Shallots (or onion) (sliced)

Garlic (sliced)

Fresh hot red chili (sliced diagonally)

Red sweet pepper (thinly sliced)

Tamarind (dissolved in 1 tbsp water)

Salt

Sugar

Bay leaf

Laos

Method
  1. Divide the livers in lobes, bring it to a boil with a cup of water. and discard the water

  2. Heat the oil in a wok and stir fry the liver over medium heat for about two minutes or until the color become light brown and set aside

  3. Using the left over oil in the wok, saute the shallots, garlic, hot chili and sweet pepper for approximately 2 minutes or until you can smell the aroma

  4. Add the liver and stir fry it for another 2 minutes and it is ready to serve
