Sambal Balado (Crispy Chili Beef)

 

Ingredients

675 gm

480 ml

6 tbsp

1

10 cloves

3 tbsp

200 gm

Beef topside

Water

Peanut (or vegetable oil)

Onion (thinly sliced)

Garlic (peeled and thinly sliced)

Hot chili paste (or sauce)

Tomatoes (chopped)

Salt

Method
  1. Place the beef and water in a large saucepan, bring to the boil, then reduce heat and simmer for 20 minutes
  2. After the cooking time, drain the beef  and set aside to cool
  3. Once cold enough to handle, slice the beef as thinly as possible, then cut into 5 cm squares and dry with kitchen towels
  4. Heat half the oil in a large frying pan, add the dried beef slices and fry for 5 minutes , turning from time to time, until the beef is browned and dry
  5. Remove with a slotted spoon and set aside
  6. Wipe the frying pan out with kitchen towels then heat  the remaining oil in the frying pan, add the onions and garlic and stir fry for 3 minutes
  7. Add chilli paste or sauce, salt and tomatoes, mix well and cook for 5 minutes
  8. Return the beef to the pan and stir-fry for 5 minutes
  9. Serve immediately
