Nasi Goreng Babat (Tripe Fried Rice)
 

 

Ingredients

500 gm

Tripe (washed and cleaned thoroughly)

Fresh ginger (peeled and crushed)

Vegetable oil

Sweet soy sauce

Light soy sauce

Rice (make cold cooked rice)

Fried shallots

Tomatoes (sliced)

Cucumber (sliced)

Salt (adjust to taste)

Spice-Paste Ingredients:

Red chilies (finely grounded)

Shallots (finely grounded)

Garlic (finely grounded)

Fermented shrimp (terasi) (finely grounded)

Salt (adjust to taste) (finely grounded)

Method
  1. Mix all the finely grounded spice ingredients into a paste

  2. Boil tripe with water, add salt and ginger, until tender and the water has evaporated (If not yet tender add more water)

  3. Once the tripe is tender, remove and cut into small pieces

  4. Heat the oil, fry the spice paste until fragrant

  5. Put in the tripe and stir well, until the tripe is a bit crispy

  6. Add the rice and then add the sweet soy sauce and light soy sauce

  7. Keep stirring the mixture until all the rice grains are well-coated and everything is well blended

  8. Remove and ready to serve

  9. Garnish with fried shallots, slice tomatoes and cucumbers
