Kerecek Bumbu Kari (Beef Rind Curry)

Shallots
Candle nuts
Garlic
Coriander seeds
Coconut milk
Water
Lemon Grass (bruised)
Lime Leaves
Ginger (minced)

Turmeric
Red peppers (sliced)
Sugar
Green peppers (sliced)
Birdseye chilis
Fried beef rind
Galangal

Salt (adjust to taste)

Method
  1. Soak beef rind in coconut milk and water until soft
  2. Use a food processor or blender to grind shallot, garlic, coriander seeds, turmeric, ginger, and candle nuts to a paste
  3. Heat oil in a wok, sautee the paste, galangal, lime leaves, and lemon grass until paste is almost dry and oil seeps through
  4. Add the coconut milk from the rind and all the chili peppers
  5. Bring to a boil then add beef rind, salt and sugar and cook until rind is soft
  6. Serve with rice
