Shallots (peeled and chopped)

Garlic (peeled and chopped)

Candlenuts (chopped)

Water

Thick coconut milk

Ground ginger

Ground new mexican chili

Ground turmeric

Salam (or bay leaf )

Chicken (cut up into bite size pieces)

Salt (adjust to taste)

1. Put the shallots, garlic, and candlenuts in a blender and work until smooth
2. Transfer to a deep pan or wok, add the rest of the ingredients
3. Simmer 1 to 1 1/2 hours until the sauce is thick, then taste and add more salt if necessary
4. Serve hot
