Soy sauce

Brown sugar

Red pepper flakes (crushed)

Onions (finely chopped)

Garlic (minced)

Gingerroot (peeled & grated)

Peas

Scallions (chopped)

Lime peel (grated)

Bean sprouts

Firm tofu (cut into 1/2-inch cubes)

Fresh lime juice

Fresh cilantro (chopped)

1. Follow directions according to package to prepare noodles then drain and set aside
2. In a large pan, combine soy sauce, brown sugar and red pepper flakes and stir to dissolve sugar
3. Add onions, garlic and gingerroot
4. Cook for  about 2 minutes
5. Add peas, scallions and lime peel
6. Stir and cook for about 1 to 2 minutes until peas are tender and bright colored
7. Add bean sprouts and tofu
8. Continue cooking and stir just until bean sprouts are slightly wilted
9. Add noodles and stir to mix
10. Add lime juice to taste and garnish with cilantro
