Gulai Lemak (Beef Spicy Stew)

 

Ingredients

Beef (sirloin/tenderloin preferrable)

Coconut (grated)

Water

Shallots

Garlic

Candlenuts

Red bird-eye chilies

Red chilies

Coriander

Cumin

Turmeric

Salt (adjust to taste)

Pepper (adjust to taste)

Vegetable oil

Method
  1. Stir fry coriander without oil
  2. Stir fry cumin without oil
  3. Pour a cup of water into half the grated coconut. Squeeze the grated coconut to get the milk. Repeat this 4 more times so as to get 5 cups of coconut milk out of it
  4. Cut the beef into bite-size pieces
  5. Grind shallots, garlic, candlenuts, red bird-eye chilies, red chilies, coriander, cumin, turmeric and the other half the grated coconut to form a mixture of ingredients
  6. With medium high heat, pour 1 tbsp of vegetable oil into a large pan and stir fry the mixture of ingredients until fragrant and then put in salt and pepper
  7. Put the beef in and stir
  8. Lastly, pout in the coconut milk and let it cook with medium heat until the beef is tender and the coconut milk thickened and creates oil
