Empal Jawa (Beef in Soy Sauce and Chillies)

 

Ingredients

500 gm

3 tbsp

1

3 cloves

1/2 tsp

1/2 tsp

1 tsp

2 tbsp

1/4 cup

1 tsp

1 1/2 tsp

Topside (or stewing) steak

Peanut oil

Onion (finely chopped)

Garlic (crushed)

Dried shrimp paste (terasi)

Laos powder

Finely chopped lemon rind (or ½ teaspoon sereh powder)

Dark soy sauce

Stock

Palm sugar (or substitute)

Sambal ulek (or 2 fresh red chillies) (seeded and finely chopped)

Method
  1. Put the meat, trimmed of all fat, into a saucepan with just enough water to cover

  2. Bring to the boil, then simmer for 15 minutes

  3. Allow meat to cool to lukewarm in the stock

  4. When cool enough to handle, slice meat into thin strips

  5. Heat peanut oil in a wok or frying pan and fry onions over low heat until soft and transparent

  6. When starting to turn golden add garlic, chillies, terasi, laos and lemon rind

  7. Crush terasi in the pan with the back of a wooden spoon and stir fry for one minute

  8. Add beef and stir fry for about 3 or 4 minutes on medium heat

  9. Add soy sauce, stock and sugar, stir and continue to cook on low heat until liquid has almost evaporated and oil separates from the rest of the gravy (The oil should have a reddish colour from the chillies)

  10. Serve hot with boiled rice and vegetable dishes
