Bakmi Goreng (Fried Egg Noodles)

 

Ingredients

5 cups

1 lb

3 tbsp

2

2 cloves

1/2 cup

1/2 lb

2 tbsp

1 tsp

1/4 tsp

3 tbsp

2 tbsp

4-5 stalks

Water

Fresh egg noodles

Vegetable oil

Shallots (thinly sliced)

Garlic (crushed)

Boneless chicken or beef or pork (thinly sliced)

Shrimp (peeled, deveined and cut into 1/2 inch pieces)

Soy sauce

Scallions (cut into 1 inch pieces)

Salt (adjust to taste)

White pepper (adjust to taste)

Sweet soy sauce

Deep fried shallots

Baby bok choy (leaves and young stem cut into 1½ inch pieces) (or chopped cabbage)

Method
  1. Bring the water to a boil in a large pot, and add the noodles

  2. Cook for approximately 3 minutes, stirring occasionally

  3. Drain immediately and rinse it under cold water

  4. Mix the noodles with 1 tbsp of the oil, and set it aside

  5. Place the remaining 2 tbsp of oil in a wok and cook over medium-high heat

  6. Stir-fry the crush garlic and shallots until the color becomes yellow or brown, or the aroma comes out

  7. Add the chicken/beef/pork and shrimp, stir-fry for approximately 2 minutes

  8. Add the soy sauce, scallions, baby bok choy, salt and pepper, stir fry it for another 2-3 minutes

  9. Add the noodles and stir it well

  10. Lastly, add the sweet soy sauce and mix well so that all the ingredients will be evenly distributed

  11. Place the fried egg noodles on a platter and sprinkle the top with deep fried shallots

  12. Serve hot or at room temperature
